Το καθαρό (άνυδρο) γαλακτικό οξύ είναι στερεό, λευκό, άοσμο κρυσταλλικό σώμα που διαλύεται πολύ εύκολα στο νερό με το οποίο σχηματίζει ένα διαυγές έως υποκίτρινο υγρό. Είναι πολύ υγροσκοπικό (απορροφά υγρασία από την ατμόσφαιρα), γι’ αυτό και στο εμπόριο διατίθεται ως διάλυμα σε νερό με περιεκτικότητα που κυμαίνεται από 22-90%.
